Banana Protein Cake
This warm, comforting banana protein cake is easy to make, and great for breakfast or as a pre- or post-workout snack. It’s super-healthy, packed with wholesome ingredients (bananas, oat flour, protein powder, eggs, maple syrup, applesauce, cacao nibs and walnuts).

- Bananas (Large, Overripe) – 2 (300g)
- Eggs (Large) – 2 (100g)
- Egg Whites – 120g
- Maple Syrup – 15g
- Oat Flour – 65g
- Whey Protein Powder (Unflavoured) – 50g
- Applesauce (Unsweetened) – 113g
- Baking Powder – 7g
- Sea Salt – 1/4 tsp
- Cinnamon Powder – 15g
- Vanilla Essence – 15g
- Cacao Nibs – 35g
- Walnuts – 35g
Mash the bananas with a fork in a large bowl.
Add the eggs and egg whites, and beat for a few minutes.
Add the protein powder, and mix until smooth making sure there are no lumps.
Add rest of the ingredients (except cacao nibs and walnuts), and gently mix.
Now add cacao nibs and walnuts, and gently fold them into the mixture.
Line a loaf pan with parchment paper, grease it with low calorie oilve oil cooking spray, and add the batter.
Bake in a pre-heated oven in the middle rack at 180 C for 15-20 minutes. Remove from the oven, and let it cool completely.
Optionally, spread some maple syrup and sprinkle dessicated coconut over it. (Note that topping is not included in the macro calculation above.) Enjoy!
