Chocolate Banana Protein Cookies with Coconut and Cranberries
These banana chocolate cookies are packed with goodness, and are perfect for a quick breakfast, pre- or post-workout meal, or just as a midday pick-me-up snack.

- Banana (Large, Overripe) – 1
- Whey Protein Powder – 25g
- Egg – 1
- Egg Whites – 90g
- Rolled Oats – 100g
- Oat Flour – 50g
- Cacao Powder (Unsweetened) – 35g
- Maple Syrup – 30g
- Sea Salt – 1/4 tsp
- Cinnamon Powder – 7g
- Cranberries, Dried – 50g
- Dessicated Coconut – 30g
Mash the banana in a big bowl with a fork.
Add the egg and egg whites, and beat with a fork until smooth.
Add the protein powder and mix until smooth.
Add rest of the ingredients to the bowl, and mix.
Line a baking sheet with parchment paper and lightly grease it. With a large spoon, pour mounds of the mixture onto the baking sheet, and level off with the spoon to form cookies.
Bake in a pre-heated oven at 180C for 8-10 minutes. Remove from the oven and allow to cool. Enjoy!
