Oat Banana Protein Cookies with Berries

These banana oat cookies are packed with goodness, and are perfect for a quick breakfast, pre- or post-workout meal, or just as a midday pick-me-up snack.

Ingredients

  • Bananas (large, ripe) – 2
  • Whey Protein Powder – 30g
  • Peanut Butter Powder (I used PB2) – 25g
  • Rolled Oats – 75g
  • Goji Berries – 25g
  • Cranberries – 50g
  • Sea Salt – 1/4 tsp
  • Cinnamon Powder – 7g

Recipe

  • Mash the bananas in a big bowl with a fork.

  • Add the protein powder and mix until smooth.

  • Add rest of the ingredients to the bowl, and mix.

  • Line a baking sheet with parchment paper and lightly grease it. With a large spoon, pour mounds of the mixture onto the baking sheet, and level off with the spoon to form cookies.

  • Bake in a pre-heated oven at 180C for 8-10 minutes. Remove from the oven and allow to cool. Enjoy!
