Oat Banana Protein Cookies with Berries
These banana oat cookies are packed with goodness, and are perfect for a quick breakfast, pre- or post-workout meal, or just as a midday pick-me-up snack.
Serving: 100 calories per 50g cookie (Recipe makes about 10 cookies) Macros: Protein: 5g, Carb: 19g, Fat: 1g
- Bananas (large, ripe) – 2
- Whey Protein Powder – 30g
- Peanut Butter Powder (I used PB2) – 25g
- Rolled Oats – 75g
- Goji Berries – 25g
- Cranberries – 50g
- Sea Salt – 1/4 tsp
- Cinnamon Powder – 7g
Mash the bananas in a big bowl with a fork.
Add the protein powder and mix until smooth.
Add rest of the ingredients to the bowl, and mix.
Line a baking sheet with parchment paper and lightly grease it. With a large spoon, pour mounds of the mixture onto the baking sheet, and level off with the spoon to form cookies.
Bake in a pre-heated oven at 180C for 8-10 minutes. Remove from the oven and allow to cool. Enjoy!
